There's a potluck at work tomorrow. I kept mentioning how I was going to bring cupcakes--the copy of VegNews I got free last weekend had a recipe for yellow cupcakes and frosting. I stopped by Freddy's after work to buy cupcake paper thingies, among other things (total ADD moment: forgot two things, even though they were on my freaking list!!). I was all excited.
It did not occur to me to wonder if we had enough sugar. Duh, I'm not the only person around here who likes to make sweet things. No sugar. D'oh.
And now it's too late and I'm too tired to walk to Freddy's to score some more. Gaaah.
Oh well. I had no idea how I was going to get them to work anyhow.

Date: 2006-03-23 03:51 am (UTC)If you have powdered sugar you can find a recipe for icing that uses it instead of granulated. Most buttercream and fake buttercream frostings use powdered sugar.

Date: 2006-03-23 03:59 am (UTC)I'm always a tad wary of using substitutions the first time I make something, especially when it's for a non-vegan audience. If I make something, and it doesn't turn out all that great, then I have a bunch of people who assume vegan food sucks. *lol*
I know someone else was also planning on having cupcakes, so I'll just have to bring them in another day.
