Three cups uncooked bow tie pasta
One bag frozen "fiesta" style veggies from Fred Meyer (see note)
Two tbsp margarine
Two tbsp flour
Two cloves garlic, minced or pressed
One tsp "italian seasoning"
One cup soymilk, preferably unsweetened
Quarter tsp salt
One tbsp nutritional yeast
Two green onions, including green parts, sliced thin
Fresh ground pepper
Start the pasta in a larger pot than the pasta would need on its own. Meanwhile, cook the veggies, I used Ye Olde Microwave.
Make the sauce! Put the garlic, margarine, and seasoning in a smallish saucepan, and cook on medium-low for a minute or two. Add the flour and stir constantly for another minute. Add the soymilk, a bit at a time, mixing it in thoroughly before adding more. Add the salt and nutritional yeast and keep on low for a few minutes, stirring frequently. Add the green onions, stir well, put on the lid and take off the heat.
Drain the pasta (I drained that and the veggies at the same time) and put that and the veggies back into the pot, off the heat. Pour the sauce over and mix thoroughly. Put pepper on, to taste. Serves about three people, or me and a lunch or two.
NOTE: These veggies are a Fred Meyer store brand. It says "Garden Blend" in big letters and "Fiesta style vegetables" below that. They're on sale for $1.19 right now. If you don't live here, it contains: broccoli, carrots, kidney beans, white beans, garbanzo beans, italian green beans, red peppers. Yay for nutrition :-)
