So, I made lasagna.

Fake cheese, from the lasagna recipe I linked to before, on vegweb:

The "cheese" is mostly crumbled tofu and tofutti's "Better Than Cream Cheese." There's also carrots, garlic, fresh parsley, lemon juice, and italian seasoning. I think it's mean to resemble ricotta and another cheese. I forget which one.

The sauce recipe was a modified version of what my mom always made when I was growing up. I took out the hamburger and added a can of tomatoes, other than that it's unchanged.

Pasta, "cheese," sauce, and spinach, as it was being layered:

I put some Tofutti "mozarella" slices on top before I baked it. It looked weird but melted well, and tasted pretty good.

On a plate, next to the garlic bread I made (yay for Earth Balance margarine!):

Dessert! Pepperidge Farm cherry and apple turnovers are vegan, I kid you not. They even specify that the monoglycerides are from soybeans! Soy Dream isn't as good as So Delicious, but it's okay on a turnover.

I'm so stuffed I feel ill. Oy vey.
