There's a lovely muffin recipe in How It All Vegan. Unfortunately, it says it only makes six, so I doubled it, and it turns out it did indeed make a dozen, and now I have to wait for another dozen muffins to come out of the oven, and run around like a mad woman once they're out so I get to work on time! Hopefully they won't fall flat, I did put the batter in the fridge while the first batch baked, so that should help. Silly baking powder...I can always decide the flat ones get to stay home for my housemates etc.

I got to use two egg replacers, though, since I was doubling it. Half of it is flax "egg", and the other half is vanilla soy yogurt. The recipe didn't call for vanilla (scandalous!), but between the soy yogurt and the vanilla soymilk, I should be fine.

I put strawberries in the muffins, Oh God Yes. I wish I'd put some thought into a spice that would taste good with strawberries...maybe nutmeg? Hmmm...

Using flax seeds for eggs is so strange and cool. Two tbsp ground flax seeds, three tbsp water, mix with a fork or blender, and then voila! It's this weird gelatinous/milkshake consistency. I've started making oatmeal pancakes from Laurel's Kitchen again, using flax "eggs", and they have that lovely "eggy" texture to them. They don't work in recipes that use white flour (no, not in cookies, and not in most cakes), but for whole-wheat pancakes or muffins? Splendiferous. I'm thinking of making a zine (of completely random stuff) for the Zine Symposium later in the summer, and my variation on that oatmeal pancake recipe is totally going in there.

Having twice as many muffins as I thought means I can leave some here and take some to work with me, in addition to leaving some on the bridge. But I'll be leaving them there awfully late...the "breakfast on the bridge" thing is only from 7 to 9, and I won't be on the bridge until after 8!

After work I'm going to go look at a house that's just a few blocks east of Ladd's Addition, the house sounds awesome but the rent is kinda pricey: $450. That does, however, include all utilities (including wireless internet). The guy who owns the house is 40 and has a 9-yr-old that's there a few nights a week, and then he's got a couple of rooms rented out to college students already--I'd be the third renter. It's not a vegetarian house, but goddamn, what a fantastic location. He also has a huge TV, but it's apparently only used for frequent movie-watching. I can handle movies--but I hate 99% of TV.

Off to check on my muffins. Hee.
