this for dinner tonight. It was very yummy, but:
You really do need to use frozen spinach. Fresh took up too much space in the pan. So either use frozen, or microwave the fresh stuff a little first. And cut it down way smaller than I did. I've thought about just pureeing it next time, with more of the white sauce.
Mmm...olives. Ponying up for good olives and using fresh rosemary (it grows like mad in the front yard) made a real difference.
But good marinara in a jar seems to work just fine--I used some Newman's, and since the recipe only calls for a pint, we have dinner tomorrow as well.
Use more pasta! I didn't read the directions clearly, and had half a box's worth of pasta left over. We're going to rip it up for dinner tomorrow night. Yup, torn up leftover lasagna. It's all the same thing in a different shape, so it should be fine.
I forgot to mention, there was a Bengal Cat at Acorn War. It was hard to
not notice the cat--you tend to notice a cat on a leash. They came by our encampment at one point, and it was the sweetest kitty imaginable. The cat's owner says he acts a lot more dog-like, in being friendly and affectionate, not to mention being okay with a leash! They're very very soft, and this one had unusual coloring, in stripes, and blue eyes. They're very regal as well, this kitty reminded me of the cats that Egyptians used to worship.
I'm really into the idea of adopting cats from the humane society because they put down so many cats each year. I almost wish my cat allergies were as bad as
axiom's so that I had an excuse to own a Bengal... I
can pet them, I just have to wash my hands afterwards and not touch my face, and I can't allow a kitty on the bed or I sneeze at night. It would be nice to really pet and nuzzle a cat more often.
